ASIAN-STYLE LAMB LEG STEAKS

Ingredients

MARINADE

    •  
  • 2 lamb leg steaks (about 250 g each)
  • 1/4 cup (60 ml) vegetable oil
  • 2 tbsp (30 ml) soy sauce
  • 2 tbsp (30 ml) honey
  • 1 tbsp (15 ml) miso
  • 1.5 tbsp (22 ml) lime juice
  • 1/2 tbsp (7.5 ml) chili flakes

SALAD

    •  
  • 1/2 white onion
  • 1 red bell pepper
  • Mint and basil leaves (to taste)
  • 12 tbsp (15-30 ml) vegetable oil
  • 1 tbsp (15 ml) rice vinegar
  • 1/2 tbsp (7.5 ml) sugar
  • Salt and pepper
  • Sesame oil (optional)

Preparation

  1. In a large bowl, whisk together the marinade ingredients until smooth.
  2. Add the lamb steaks to the bowl and marinate in the refrigerator for 1 hour.
  3. Slice the onion and bell pepper into thin strips. Finely chop the mint and basil leaves.
  4. In a bowl, combine the onion, bell pepper, vegetable oil, rice vinegar, sugar, salt, and pepper to taste. Mix and set aside. Add the herbs just before serving.
  5. Remove the lamb from the refrigerator and let it sit at room temperature for 10-15 minutes.
  6. Heat a skillet over medium heat. Cook the lamb steaks for 3 minutes on one side. Cover and cook for 4 minutes on low heat.
  7. Transfer to a cutting board and let rest for 2-3 minutes before slicing.
  8. Serve and garnish with the vegetables and a light drizzle of sesame oil.

Chef’s Tip

Stir in 1 teaspoon of freshly grated ginger to elevate the marinade with a delicately spicy aroma.
