Spiced Leg of Lamb on the BBQ

  • 4 Quebec lamb leg steaks
  • 4 sprigs of fresh thyme 
  • ¾ cup (175 ml) olive oil
  • 1/2 tbsp (7 ml) cumin
  • Dried chili pepper, to taste (optional)
  • Salt and pepper


  1. Mix the marinade ingredients together. Brush each steak with the marinade, cover and let sit for at least 1 hour.      
  2. Grill the steaks on the BBQ for approximately 6 minutes depending on their thickness (a pale pink center is recommended for lamb slices).
  3. Before serving, cover with aluminum foil and let rest for 3 to 5 minutes.  

Chef’s Tip

For super tender meat, let it rest before serving with garlic butter and parsley.
