Lamb and Tzatziki Sandwich

Ingredients

Sandwich
  • 10 slices of cooked lamb 
  • 2 pita breads
  • Arugula
  • A few cubes of Feta cheese
  • 1 medium tomato, sliced in rounds 
  • Shredded red cabbage
  • Tzatziki sauce
  • Salt and pepper
Homemade tzatziki sauce
  • 1 Lebanese cucumber, peeled and grated 
  • 2 garlic cloves, minced 
  • 2 cups (500 ml) sour cream
  • 1 tbsp (15 ml) lemon juice
  • 2 tbsp (30 ml) extra virgin olive oil  
  • 2 tbsp (30 ml) fresh mint, chopped 
  • 1 tbsp (15 ml) fresh dill, chopped 
  • Salt and pepper

Preparation

  1. Cut the vegetables.
  2. Wash the lettuce.
  3. Drain the cheese and crumble it into small pieces. 
  4. Split the pita in two and spread one side with tzatziki.
  5. Assemble in the following order: sliced meat, shredded cabbage, tomatoes, feta cheese and lettuce.   
  6. Salt and pepper to taste. 
Homemade tzatziki sauce
  1. In a bowl, mix all the ingredients.  
  2. Let sit for 1 hour in the refrigerator before serving with pita bread.

Use leftovers from your leg of lamb to make this recipe.
